Thickened Vino Cotto Syrup

Ingredients

1/4 teaspoon corn starch
1/4 cup Vino Cotto di Montillo

Directions

1. In a small sauce pan, add vino cotto and corn starch. Whisk until the corn starch is completely dissolved.

2. Place the sauce pan over low heat and stir continuously until the vino cotto begins to rapidly boil. Allow to boil for 10-20 seconds to thicken. Remove from heat and transfer into a gravy boat or creamer to serve.

3. NOTE: To chill the vino cotto syrup topping, cover with plastic wrap and refrigerate until ready to serve. The syrup will thicken as it cools.

4. To Serve: Thickened vino cotto syrup can be served hot or cold. Stir before serving, then drizzle it over your choice of foods; such as pork chops, chicken, sirloin tips, vegetables; use it as a marinade; drizzle over cheesecake, or dip your favorite cookies into it. Delicious!
