Directions
1. In a skillet, heat extra virgin olive oil at medium-high heat. Add
onions, crumbled bacon bits and season with salt and pepper to taste.
2. Cook mixture until onions are browned on the edges.
3. Pour vino cotto over the onion and bacon mixture. Lower the heat and
cook until the vino cotto begins to bubble. Remove from heat.
NOTE: Try this topping recipe served over pork chops, sirloin tips,
lamb or salmon!
Chicken Recipe
Ingredients
4 boneless, skinless chicken breast halves each about 6 oz. (dice to
bite-size pieces *optional*)
2 Tablespoons extra virgin olive oil
salt and freshly ground black pepper
Directions
1. Heat extra virgin olive oil in a large skillet over medium-high to high heat.
2. Add the chicken, season with salt and pepper to taste and brown
for 6 to 7 minutes until done.
3. Reheat the bacon and onion topping.
4. Place one chicken breast on each serving plate and spoon hot bacon
and onion topping over each. Serves 4.
